Sézanne at Brae
Chef Daniel Calvert of Sézanne, Tokyo, will join us for Melbourne Food and Wine Festival 2025.
Two dinners will be held at Brae on Wednesday March 26 and Thursday March 27.
Daniel Calvert – 3 Michelin Stars and Asia’s Best Restaurant, 2024 – interweaves the culinary cultures of his experiences in London, New York, Paris, Hong Kong and Tokyo with an immersive visit to Brae, Australia.
Here, Daniel and his team will use organic and sustainable produce from Brae Farm and the Otways to inform his classically rooted modern French cuisine, fashioned with his signature razor-sharp technique.
A shared 8-course menu will showcase dishes from Sézanne alongside Brae’s nature-based, Australian sensibility.
The two evenings will be an expression of Daniel Calvert and Dan Hunter’s combined experiences, their shared focus on nature, and a reflection on the land that surrounds Brae Farm and the Otways.
No dietary requirements are able to be accommodated for these dinners.
Tickets for this event will be sold as groups of two and four only. Tickets are limited and go on sale at 10am on Thursday, November 28.
