It's compost flipping day, one of our most important systems in the kitchen garden.
Every 3-4 months we rotate our compost bays and start a new compost pile. We always have one compost pile in progress that we're adding to daily, one pile that is finishing under a black tarp, and at least one pile of mature compost we're using as our main source of fertility in the garden.
We have a closed loop system, making compost onsite with food waste from the kitchen, weeds and crop residues from the kitchen garden, wood ash and charcoal from the bread oven, and leaves and clippings from the ornamental landscaping around the restaurant.
We turn the in-progress compost pile every two weeks to generate heat and mix the inputs thoroughly. The finished product is looking great this spring. Dark brown, fluffy, and nicely broken down.
